Is there a way to specifically search for version 78* themes and only show those version that work?

Complete themes (i.e. change everything, not just a background at the top and bottom) are no longer supported. Supposedly that was dropped in version 68. You can't trust web pages such as Monterail Full Dark 2 for TB>68 that claim they support version 78.
The closest that is left is some that are implemented as extensions, not themes. Offhand I can't think of any other than Phoenity. There used to be one for Monterail but that didn't work with version 78.

The easiest way to find compatible themes is to use Thunderbird to find them, rather than a browser. In tools -> add-ons select themes and then type something in the "find more add-ons" search field. That will display the search results in a tab in Thunderbird.
Regardless of which method you use be aware that some themes that claim to support version 78 won't install, and might not display an error message when that occurs. For example "Foggy Forest by MaDonna" . The project developers didn't convert all of the persona type themes (legacy add-on) to WebExtension themes.

Thanks. I already have the Phoenity icons and buttons. Just looking for a little spice on the top and new windows. Oh well, I guess I'll just wait like others.

You want a little spice. Try CustomCSSForTB:

You have to do some clicking and experimenting, but it can do a LOT !!
If you have a basic working knowledge of CSS you can combine CustomCSSForTB with my own CSS tweaks that were originally designed for CustomizeMyBird (same author as CustomCSSForTB). To get the most out of my CSS you would have to hand tweak the CSS code for your own folder locations, fonts, and icon choices to some extent.

Just out of interest, I downloaded a zip of 85.0a1 and booted it up with a clean profile and my old 68 Chrome folder added, the main UI still looks like this! - http://forums.mozillazine.org/viewtopic ... #p14855069
The Options and Addon Manager have dropped back default, but I suspect they're being styled by content now. But main UI Email window is fine.

I've use this forever, and absolutely hate the look of every single new one I've tried. I rolled back to an old version just to keep using it, but I figured I'd try again since it's probably so unstable now.

I find the new monochrome text-like icons difficult to work with
