The TBird 68 beta series has a unique dark theme. Will the release TBird 68.0 have that theme? I f not as default as a selection? If not a selection as a setting(s)?

I am running 69 beta, and in add-ons > themes it has a default dark and light theme. I'm pretty sure 68 does also, but without more specifics only you can determine whether that is the "unique" theme you mention.
Would anyone know if this fix for Firefox also fixes the same/similar problem in Thunderbird 68.0?
Looking at the tracking flags it is fixed for Firefox 70. Firefox 68 ESR and 69 beta are affected, but not fixed at this time. So I would say it isn't fixed for Thunderbird 68.0.
You could click "Follow" and see when/if it gets fixed for 68.0.

I have been looking at the current 68.x betas and 69.x betas as well as the builds of 68.0 candidates and I don't like the color schemes of them. The 'folder window panel' and the 'Message subject panel' are black backgrounds with white text. Would anyone know if that is hard coded in or can it be changed? Easily?

Add-ons > Themes. There should be a Default, Dark and Light theme.
I have the theme of Thunderbird 60.8 set to the "Default" theme and always have.
