I a using Postbox 3.0.11 on a Macbook Pro with Yosemite 10.10.1
I am trying to look for a way to assign a Topic to multiple emails by setting rules... can anyone point me in the right direction to using topics in this way?

I doubt anyone on these forums use postbox so your chances of a decent answer are pretty slim.
What sort of man would put a known criminal in charge of a major branch of government? Apart from, say, the average voter.

Postbox topics sound very similar to Thunderbird tags. You can automate assigning tags to new mail messages using a message filter in Thunderbird. See if they kept that functionality in Postbox.
