how do I assign CTRL+B to paste and go ?

I thought it was by default but it isn't!

CTRL+B is the standard Windows shortcut for turning on Bold font. Ctrl+V is the default for pasting data from the clipboard to the current document.

Ctrl + v are the system paste keys ctrl + b is for bolding. Seeing as this is a system setting you should not mess with it

No, they are no irrelevant. Firefox complies with operating systems standards and all major operating systems allocate Ctrl+V to the Paste command.
You'll do a lot better to learn to use the industry standards rather than trying to get the industry to change to match your wishes.

I use this extension for keyboard shortcut for paste and go.

So, for example, you can assign Ctrl+Shift+V to paste and go, which gives the same functionality as Opera and Vivaldi. Or you can assign whatever you fancy, e.g., Ctrl+Shift+B.

However, this extension is not compatible with multiprocess if that matters to you. And I also have no idea whether it will be compatible with Firefox 57, I suspect not.
