Are you referring to when you start typing in the Location Bar the lowest line in the Location Bar drop-down displays all the installed Search engines?

If so, that is a new feature in preparation for Firefox 57 where the Search Bar is hidden by default, and is sitting in the Customize palette.

.
A mind is a terrible thing to waste. Mine has wandered off and I'm out looking for it.

If the other ones show (in the address bar or search bar) when you are trying to search, you can then choose one of the other ones without having to set it as the default first. It's for convenience.
