I'm using v57.
Often when I'm working on a particular project, I use a quite specific combination of windows and tabs (3 windows, up to 7 tabs in each). This works fine if I reboot because I can restore the previous session. If my PC crashes, it's not so easy.
What's the best way to be able to set up this environment semi-automatically (ie apart from clicking 15+ bookmarks).

If you create a folder of bookmarks for each window, you can open all the bookmarks in that folder with one click using the "Open all in tabs" menu item at the bottom of the expanded folder menu. Just open a new window, the open all those bookmarks in that window, open another window and open those bookmarks, etc.
To create the bookmarks folder, open the sites for that folder in a separate window, right click a tab (any of them, doesn't matter which) and click "Bookmark all tabs..." Do that for each window of tabs.
It's a little work on the front end, but will make it much easier if you lose your session to restore it later.
You could also see if this extension will allow you to create a saved session to reuse later.

What I suggest you do is to go https://addons.mozilla.org/en-US/firefo ... ame&page=2 which isolates all the WebExtensions available for Firefox 57 and sorts them alphabetically.
From there, you'll have to hazard a guess as to which page an extension is likely to be on and then change the page number in the URL to that. The above link loads page 2. So if you wanted to run a search for "Tab Groups" for example then you need to change the "2" into a figure which will load the page beginning with the letter "T".
I'll save you the trouble of doing that in this example because extensions containing the word "Tab" begin on page 286: https://addons.mozilla.org/en-US/firefo ... e&page=286 I loaded page 300 as a quick guess and then backtracked to 286.

Obviously make sure you remove the highlight in the URL before attempting to amend the page number.

If your PC crashes & your Session Restore files are corrupted, then you still should be able to recover your Session.
How about your use a batch file to open FF & have it make backups of your Session Restore files just before opening FF?

Thank you muchly. This looks fairly simple to me and works well. Thanks also to the other responders. The only real concern on crashes is the time to restore my config (which takes a few minutes). Although restoring the setup after a crash would be useful, it's probably not worth the effort to set it up.
