Is there a flash extension that will allow me to control when a video will play only when i click on it? If yes, what is it called?

You can set the Flash Player Plugin to Click to Activate in the Addons Manager.
Note that many sites are actually using the HTML5 player for video now days and not the Flash Plugin from Adobe.
