Is there an easy way to set site protection to strict or standard or to ask each time so I can create a whitelist of standard sites in ff 79?
Some sites don't work right with strict blocking but I don't want to be followed around online.

If you click on the shield in the nav block you should be able to set some individual site protections.
Adding something like Privacy Badger will allow control over some trackers.
Doesn't matter what you say, it's wrong for a toaster to walk around the house and talk to you
