I once saw an add on that would notify the sender when the receiver opens an Email. Is there such a thing or am I mistaken.

I'm not sure but I think that if the receiver does not have that option/pref enabled, then no notification will be sent to you.
Again, not sure, after a quick search of AMO, that an extension to do that is available.
Maybe someone may know of a way.
