I'm using Thunderbird 52.2.1 on Mac 10.11.6 and I've been using Thunderbird since forever (~2010).
It seems that since one iteration go I could suddenly rename and/or move the Junk folder.
With several mis-steps of the mouse, several times I have ended up with the Junk folder in the the Inbox and
other folders. I've also been able to rename it.
This behavior is undesirable. How can I recreate the old behavior of NOT being able to rename or move the Junk folder?

I suspect you disabled the junk mail controls actually using the junk folder. For example specifying it as the folder to move new junk messages to. Once you do that its no longer a special folder, so you can delete and or move it.
If you're using a IMAP account, check that "when I delete a message" in the server settings is set to move the message to the trash folder. POP accounts don't have a similar setting.
