After using POP3 for many years, I had to switch to IMAP to exchange email with my Gmail account.
Both send and receive are now working normally.\
How can I change the setup (either on Thunderbird or Gmail) so that when I delete files on my local folder they are retained on the Gmail server?

There are settings in both Thunderbird and Gmail that you should review and adjust to suit your intention. On the Gmail side, click on the "Gear" icon to display "Settings". Then click on "Forwarding and POP/IMAP". In the "IMAP Access" section option "When a message is marked as deleted and expunged from the last visible IMAP folder:" choose the one that works for you, probably option 1 or option 2.
In Thunderbird, under menu path Tools->Account Settings->Server Settings->When I delete a message->choose option 1 and choose a target folder on the server, or choose option 2.
