for an e-mail address which is available somewhere it won't be found:

Is Thunderbird set to provide for Global Search and Indexing? Check that using menu path Tools->Options->Advanced->General->Advanced Configuration.

How is the account set up in Thunderbird, as POP or IMAP? Find out using menu path Tools->Account Settings->Server Settings->Server Type at the top right of the dialogue.
When you speak of the email address being "available somewhere", where do you expect it to be available? In a message previously received in or sent from Thunderbird or somewhere else?
Global Search and Indexing is switched "On" so it may be a problem with the index file. Close Thunderbird and navigate to the profile folder -- http://kb.mozillazine.org/Profile_folder_-_Thunderbird
Locate and delete the file global-messages-db.sqlite
Restart Thunderbird and allow time for that index to be rebuilt before trying that search again.

I have about 10, 15 e-mail accounts, should be pop all of them:

Unfortunately there is no indicator. For users with very large message file and multiple accounts, allowing Thunderbird to run overnight may be necessary to ensure the process completes.

I tried a same search, yes, now it founds an address, so it seems to work.
