When I have more than one e-mali address and compose a message, I can set the "From" entry to each one of my addresses.
One of these entries is an alias, which I want to use only for one particular contact,
because I want this contact to know only my alias, but not my real e-mail address.
Is it possible somehow, to let TB use the alias automatically only for this one contact?
I mean, to let TB use the alias without the need of changing this entry each time manually?

You could create a multiple identity for that account. That would add the email address to the From: drop down list, and it would get selected automatically if you reply to a message sent to that alias. It also lets you tweak settings for that alias (such as choosing a different Sent folder etc.)
