My Windows 7 desktop hung while I was tidying my Inbox (no fault of Thunderbird 68.5.0 !). When I was reinstalling I opted for IMAP in Server Type by mistake - not supported by Spamarrest.
How can I change this to POP3 ?

Changing account types can cause problems. Better to create a new account, selecting POP in your case, and then removiing the IMAP account only after the POP is confirmed to be working properly. https://support.mozilla.org/en-US/kb/changing-imap-pop

http://www.spamarrest.com/support/client/ says you can use either a POP or IMAP account. The instructions for Thunderbird at http://www.spamarrest.com/support/client/index.jsp look like it wants you to modify an existing POP or IMAP account to use its mail server (mail.spamarrest.com), rather than create a new one.
I suspect mail.spamarrest.com is a remote server that acts like a proxy server. You'd have to provide them information on how to connect to your real mail server during the signup process and it would make that connection for you transparently so that it can do the challenge/responses.
I suggest you sign up for several newsletters while trialing the service to see if they have problems. Supposedly the challenge/response system doesn't work well with legitimate bulk mailers. https://www.lifewire.com/spam-arrest-fi ... ce-1166355
