Is it possible to customize the "columns to display", e.g. to
add the "To:"-Field?

Even a Recipient-Field is not there. There is only a field Sender.

Using 0.4a there is a option to use recipient to the column layout, what version are you using Gauss?

In older versions, if 'Sender' is added, it will show 'Sender' in the inbox, and 'Recipient' in several other 'default' folders, and 'Sender' in all folders that a user has added.

The later 0.4a versions have both Sender and Recipient, and both show properly in all folders if both are selected for display..
