You can keep your profile if you pay attention to the uninstall process and do not delete all data. Why do you want to go back to an older version of SeaMonkey? Is it the bookmarking process that you are finding difficult?

What version do you want to go back to?
Backup first (second & third).
Going back may not necessarily be compatible.

Fire 750, bring back 250.

Two reasons. The bookmarks have changed and youtube wont play full screen. This all seemed to happen around the last update.
If these could easily be resolved I wouldnt bother. But otherwise just go back to last version before 2.4.

SeaMonkey 2.40 (not 2.4) is essentially a older version of SeaMonkey already in comparison to Firefox as it has same Gecko 43.0 as the old Firefox 43.0. The previous was SM 2.39

If you want to go back to 2.39 just install it over 2.40.
If you want to use an older version I would start over with a new profile.

There is a way to fix the File Bookmark dialog box. I added code to my userChrome.css file to make the box longer to accommodate the folder list. Information about making a userChrome.css file is here: http://kb.mozillazine.org/UserChrome.css
The code I added:
