Using SeaMonkey 2.40

Server Settings / When I delete a message: / Move it to this folder / a1 Trash on My-Email@gmail.com
. . . "a1 Trash" is a folder that I made
. . . I want to delete e-mail to this folder, to avoid how Gmail auto deletes e-mail in your Trash folder
. . . I click to delete an e-mail, and it doesn't put it in "a1 Trash" . . . it puts it in "Trash"
. . . Why doesn't it delete my e-mail to the specified folder?
. . . What is the default setting for this? . . . Nothing is selected, but I'm pretty sure e-mails were automatically being deleted to "Trash"

Is this the screen you're looking at (in Mail And Newsgroups Account Settings > name of account > Server Settings)?
If you select the first option and choose your a1 Trash folder, and it's still not working, it must be a bug.
On some of my accounts I keep "just mark it as deleted" selected, and have "Archive the message" selected in Gmail.

Yes, your GUI is a little different though, I'm using SeaMonkey 2.40. Here's a screenshot:

The first option is selected, yes . . . How could there be a bug with this? It seems pretty straight forward.

Here's how the defaults are set on the Gmail web page, if you were to "Just mark it as deleted" . . .

IMAP Access
When I mark a message in IMAP as deleted:
[dot] Auto-Expunge on - Immediately update the server. (default)
When a message is marked as deleted and expunged from the last visible IMAP folder:
[dot] Archive the message (default)

So, you "mark it as deleted," double-click on the Inbox to Refresh, and it's gone.
But . . . where does it go? Say you want to retrieve it, which is why I was putting it in the "a1 Trash" folder . . .

I wonder, if I found the Archives folder, and delete what's there, if it would still work.

The next time you do it, it doesn't work . . . they go to Trash again

Any way to get this to work? Or is it some straight forward bug that goes unfixed. I don't get these.

Where is that target folder located, under Local Folders or within the Gmail account's IMAP structure?

I think I created it through Sea Monkey E-mail . . . I see it on the G-Mail Web Mail page

Try changing the location for that folder to a sub-folder of Local Folders.

There is no way to put the path in there, either
