Hello,
simple question: Is there a way to compile Firefox 29 without Australis, but with the old UI? Is there a switch in mozconfig like "--disable-australis" or does the source need to be modified?

As far as I know there isn't a way. If you want a stable older version of Firefox look for the source code for Firefox ESR (extended support release). This currently V24 with security updates.

source need to be modified. you can backout the Australis changes or merge the old code. Both are very hard.
