I like my week to start on a Sunday, but nearly every time I access the calendar it is changed to start on a Monday.
I am using the latest 60.7.0 version, it did the same on the older version.

I think you can change that in Tools -> Options -> Calendar -> Views -> General -> First Day. If the setting is reset the next time you start Thunderbird try adding user_pref("calendar.week.start", 0); to the optional user.js file in the profile. Settings in user.js override any settings in prefs.js.

I also tried altering the settings in Options>Calendar>view tab. Nothing worked.
A few days ago, I changed from month to Multiweek view, and it works.
