I just did a search on this and nothing turned up helpful.
Sunbird was so easy to use <sigh>....
I create a new event.
I choose to add a new category.
I am not given any opportunity to choose a new event color like I
was with Sunbird.
Am I missing anything?

The calendar in Thunderbird has categories.
Just pick one from the dropdown in the event or task creation dialog.
You can edit categories and change the color in the Calendar preferences.
