Curious as to why my user string has an entry for Firefox?

You can disable it
Edit > Preferences > Advanced > HTTP Networking > User Agent String > (uncheck) [ ] Advertise Firefox Compatibility
or in about:config > general.useragent.compatMode.firefox > FALSE

As for the "rv:2.0pre" part, mozilla-2.0 yet has to be bumped to show the correct 2.0.1pre Gecko version, apparently this little step got lost in the efforts to get Firefox 4.0 out and to set up the branches correctly.

Some sites think that my Firefox version is 2.1, for example https://addons.mozilla.org/en-US/firefox.

Well, that may come from looking at Firefox not SeaMonkey addons, but it should nevertheless find the correct Firefox/x.x version.

No, there will always be sites which do stupid user-agent sniffing, adding a Firefox component should accommodate most of them, what's left can't be helped with other than spoofing a complete Firefox UA string without any SeaMonkey in it.
