I notice that on 2.53.1 the History sidebar options are much more limited and it's no longer possible to have Last Visited with the Date alongside.
Can this 'feature' be reverted back to how it was in 2.49.5? i.e. like this -

Not easy. This is basically the Firefox Library now. A few enhancement bugs are still open but this would need internal changes. If this is possible in firefox 60 please let me know and I will take a second look.
A lot of places api changes happened between 52 and 56 and were switched to async. There is a bug open for implementing the old history by date but so far no working patches.
The good news unlike 2.49.x where you could kill your entire history or bookmark folder with a click what is implemented now usually works

Not ideal and not a sidebar, as it claimed (?) However, it does show the route to pulling out History date info and putting it somewhere other than the Library.

please note that SM 2.53.1 official is in Beta 1 stage and is not yet "final"

Instead of fixing History sidebar places, just take advantage of SM's ability to still allow custom sidebars and port chrome://communicator/content/places/places.xul (we already know the Library can show what is wanted by default) or, specifically, the #placesViewsDeck part of it, to a custom sidebar....and you're done.

Frank, have you seen this extension from Isaac Schemm https://github.com/IsaacSchemm/sidebar-add-custom-panel
I use it in SM 2.53.2 to add own tabs to the sidebar, works great.

I was editing the panels.rdf directly to make the Places (Library) sidebar, but that extension would have made things easier!

Here's an update on this, after the additional Places Sidebar was knocked into usable shape. - 'out of the box' it was pretty useless as a sidebar.
The hovered over button in the top right is the SeaFox sidebar button, which supplements the existing F9, Ctl+ B and Ctl+ H hotkeys.
The searchbar on the Places Toolbar has been moved over to the left. The placesViewsDeck (where all the Name/Most Recently Visited stuff is) now always has a scrollbar on the right. Finally, detailsDeck at the bottom has been reversed in direction to put the good stuff on the left and also now has its own scrollbar.
The sidebar is at the minimum width for Places to be useful, but the sidebar extends to 800 px, if required.
In some ways, I just prefer the History sidebar as it was, but I must admit you can do far more with this Places sidebar and it does readily do what I was after.
