You can't go back to those old versions and see if the player on Youtube is the same as in the new versions and if the "save as" feature mysteriously comes back? All old Firefox releases are here: http://archive.mozilla.org/pub/firefox/releases/. They don't need installation, just unpack somewhere and run. You might want to move your profile out of the way though, unleashing several old versions on the same profile might screw things up.
The built-in player can be seen on any page that doesn't provide its own player, for example here: http://www.w3schools.com/html/html5_video.asp <- right-click on that video, and voila "save as" is in the menu.

That's *exactly* what I've done: run different Firefox versions using identical copies of the same profile, in the same OS, and noticing that gstreamer-enabled versions can (to date) still download youtube html5 videos as mp4 files using the "save as" context entry, whilst newer versions with gstreamer removed just can't .
Please note that in the first scenario, the file will be actually downloaded as a generic "videoplayback" file with no extension, but it's actually an mp4 file.
