Now that Firefox 56 is out, is that it, or will they be doing updates to 56 until version 57 is released?

Once a release version is put out [except for ESR's], there is never the intent to update it again.
That said, as buggy as FF is [these days], point releases are almost a given.
(Security related updates are a different issue & would be expected.)
Fire 750, bring back 250.

Firefox 56.0.1 is finished. So there will be at least one more incremental version.
There may or may not be further updates to Fx56 but only until Fx57 release day next month.

It may be finished, but when I go to help:about, it still shows 56.0 and no updates; so it must not be ready yet.

Which conveniently misses the main point, that unbeknownst to users until the update's done , .01 changes Fx 32-bit to 64-bit.
Users of 32-bit Firefox on 64-bit Windows are migrated to 64-bit Firefox for increased stability and security
