Whatever the website wants to store on your computer. They're usually files that make loading the website faster (e.g. files for a media player or other web application), or files used to track you.
You should be prompted to confirm before this happens, unless you've added sites to the exceptions list under Options > Advanced > Network. That also shows how much offline website data is currently stored.

It has nothing to do with any of those things. You can see they all have separate entries under Clear Recent History / Clear history when Firefox closes. You can type about:cache in the address bar and press Enter, then have a look at the path for Offline Cache Device. Unless you're a web developer, you may not make heads or tails of what's stored there (if anything is stored at all).
