Yes.

I would use separate Profiles for each.
Set your (separate) desktop shortcuts up using the -P switch to point to the wanted Profiles.

Re: FF 56 and the latest nightly build
It would be best to use separate profiles with the two different installations, especially if you are planning on using both versions. It's not wise to switch between Fx versions using the same profile, especially with builds in the development branches.

Re: FF 56 and the latest nightly build
It all depends on where you create your Profiles -> Profile folder.
Fire 750, bring back 250.

Re: FF 56 and the latest nightly build
In the first screenshot; the chrome folder there won't cut it, that folder needs to be in each of the Profile folders that you want to use the userChrome modifications.
path-to-Firefox56/firefox.exe -P xxxxxxxx.default
path-to-Nightly/firefox.exe -P xxxxxxxx.Nightly and add -no-remote if you want to launch Nightly when Firefox 56 is running; where Firefox 56 is set as the "default browser" in Win10. And don't use that -no-remote command with the "default browser".
Note the space between each command; around -P and between the profile name and -no-remote, if you decide to use that command.
Also, if Nightly is running you won't be able to launch Firefox 56 (the "default browser"; not can any external application that needs to use the "default browser".

A mind is a terrible thing to waste. Mine has wandered off and I'm out looking for it.

Re: FF 56 and the latest nightly build
Note that Nightly does not refer to a version but rather the most unstable development channel builds. There will be updates each day which can potentially lead to issues until fixed, finished or reverted in a update. It may seem like you updating to same version each time when you are not as about:buildconfig (listed in about:about) will show.

Actually James at the moment nightly updates twice a day
