Now that Firefox 56 is out, is that it, or will they be doing updates to 56 until version 57 is released?
Prossibly.....Without a crystal ball it's hard to tell..

Once a release version is put out [except for ESR's], there is never the intent to update it again.

Firefox 56.0.1 is finished. So there will be at least one more incremental version.
There may or may not be further updates to Fx56 but only until Fx57 release day next month. Open the pod bay doors, Cortana.
It may be finished, but when I go to help:about, it still shows 56.0 and no updates; so it must not be ready yet.
