Over the years I have created 100s of correspondence folders within TB, but I still struggle to find all the emails on a complex subject that is also part of many topics for the same correspondents.
I have looked to advice at:

I have set up his suggested saved searches and tags. He says he is relying effectively on the search of the archive rather than saving emails to folders. I think I need to be able to reliably find emails on a particular matter and think that what I need is ability to add notes or a special field to a header so that the search picks them all up.. How can do this so that the notes/ fields are also searchable preferably from within TB or by Recoll?

Is you are using a POP type account you might be able to use the Global Search functionality to achieve much of what you need. That option may work with an IMAP account but tests would be needed to confirm that.

I use the global search and it is very good.
I asked about ways to put special fields or searchable notes into the received mail because it would improve the accuracy of the results of a search.

I saw that, but Thunderbird offers no built in ways to add any notes or extra fields or to search in any way but through the Search Messages or Global Search with which you are already familiar.
There are extensions that are intended to provide additional functionality:
