Are you missing the <installation folder>\fonts\EmojiOneMozilla.ttf file in Thunderbird?
Perhaps if you copy the file to the fonts folder, then the emoji images would be the correct size.

Thanks KorvinSilver. That is using unicode. I see a hollow checkmark (with black borders) icon that doesn't extend over other headers. Since my background color is white the checkmark is white with a black outline. I deleted <installation folder>\fonts a while ago in trying to see if it made a difference in displaying the emoji (it didn't for me, but I'm using Windows 10).
Could you also re-test using the default theme? help -> restart with add-ons disabled (runs Thunderbird, not all of windows, in safe mode) will do that. If you don't check any of the check boxes to make the changes permanent the next time you restart Thunderbird it will be back to normal.

Try disabling all emoji fonts including any native emoji fonts with the font.system.whitelist preference.

I am amazed that this discussion is taking place in a calm, technical manner.
I am OUTRAGED that Mozilla has allowed this "feature" and worse, seems to consider it one and not a bug requiring immediate fix. This kind of garbage is not what one expects from an "upgrade". Who would be happy with this? You can go to sites like this one: https://www.campaignmonitor.com/resourc ... marketing/ and see who: spammers, obviously. Why has Mozilla rolled over for them?

Is there a viable workaround?

The closest to a workaround is morat's instructions at http://forums.mozillazine.org/viewtopic ... #p14796116 to change the emoji images to normal characters. When I tried it "it changed all of the colored unicode icons in subjects to monochrome unicode icons." The results might vary depending upon what operating system you use. I'm using Windows 10, he is using Windows 7.
