How many times do I have to tell Seamonkey that:
1. An email address I have put in my Address book is NOT junk
2. That emails I get from people to whom I regularly reply are NOT junk
3. That emails I get from the same sender I always open are NOT junk
Irritating, frustrating, a right pain in the proverbial.
How do I stop this incessant junk flagging?

What version of SeaMonkey?
Have you confirmed that you have Junk Mail Controls turn "On" in SeaMonkey? If you are accessing an IMAP account t's possible that those Junk determinations are being made on the server side.

It's all Yahoo mail, three accounts

Well OK, it's with Yahoo but how are the accounts set up in SeaMonkey, as POP or as IMAP accounts?
And again, do you have the Junk Mail Controls turned on in SeaMonkey? Menu path Window->Mail & Newsgroups->Edit->Mail & Newsgroup Account Settings->Junk Settings. Is "Enable adaptive junk mail controls for this account" checked? Are all of your address books selected (checked) in the "Do not automatically mark mail as junk..." box?

Yes it is ticked for all three accounts ... and also the three boxes in the sub-window below.

Are you marking as "Not Junk" the messages mistakenly marked as as Junk to help train the junk identification process?
You might try resetting the Training Data to restart the process of training SeaMonkey to recognize which messages you believe are Junk.

Every single time:
- uncheck the flag in the list BEFORE I click on the message
- click on the message ... and the flag reappears
- uncheck it again
- mark the message as Not Junk at the top of the message itself
- close the Not Junk bar at the top of the message
- check it's in my address book, maybe tweak the content of the address book entry
- go to another message ... and ...
- the flag reappears ... uncheck it
- click on the message ... and the flag reappears
- uncheck it again
- mark the message as Not Junk at the top of the message itself
- close the Not Junk bar at the top of the message
- check it's in my address book, maybe tweak the content of the address book entry
- go to another message ... and ...
- the flag reappears ... uncheck it
- click on the message ... and the flag reappears
- uncheck it again
- mark the message as Not Junk at the top of the message itself
- close the Not Junk bar at the top of the message
