Here are the instructions on how to change the default search engine in Firefox. https://support.mozilla.org/en-US/kb/ch ... gs-firefox
If that doesn't change it or it changes back repeatedly, you may have a bad extension or malware. Ctrl-Shift-A and picking the extensions will show your extensions. As above, if that doesn't work in Waterfox seek help from their forum.
If you use the combined search/address bar the search engine should not change randomly. If you use the separate search bar, the search engine can accidentally be changed by pressing ctrl-up arrow or ctrl-down arrow.

Apart from that, if you have installed the extension "Keyword Search", it allows you to set the default search engines in a variety of situations. Just make sure that you haven't set "Bing" as the search engine through that extension.

Moving to Third Party Builds as the UA string reports Waterfox in use.
