I would like to see the day of the week along with the date of the messages. For example, where I currently see "15/05/2020, 22:30" I would like to see something like "Fri 15/05/2020, 22:30".
I looked at several add-ons that might help (without luck) and also at the info at http://kb.mozillazine.org/Change_the_Date_Format (this page lists properties, like mail.ui.display.dateformat..., that I do not have in my configuration, so maybe it refers to an older Thunderbird version). I would not like to modify the date preferences used in my operating system either.
Any ideas about how this can be done?

Try adding the config settings referenced in that article, closing and restarting Thunderbird after updating the settings.

What version of Thunderbird are you running?
What value did you enter for mail.ui.display.dateformat.today?
What value did you enter for mail.ui.display.dateformat.thisweek?
What value did you enter for mail.ui.display.dateformat.default?

My version is 68.8.0 (64-bit). I tried with 1 for mail.ui.display.dateformat.thisweek and 1 for mail.ui.display.dateformat.default. I did not define mail.ui.display.dateformat.today (as this one is fine for me as it is now).

In particular, with the second one it is very easy to add the name of the weekday (just with %a%c), but unfortunately it is not compatible with my current Firefox version.

I have the same problem. Is there really no solution? I would want, for TODAY's date, 08/11/2020, 12:30 pm or similar. I also do not see any mail.ui.display.dateformat.today/thisweek or similar in my Options > Advanced > Config Editor. Why was it removed, I wonder? There must be some other place to change it.

Right-click in the Config. editor, New, Integer, with the name mail.ui.display.dateformat.today and value 2, restart TB. Today's mail now has the full system short date in the Date column. Tested in TB 68.6.
