How can I change the reply marker?

Is there a way I can have the typical > sign used as 'replied to' text when viewing messages vs the vertical line? If I chose to reply to a message I can get the > sign to be used, but I can't seem to get it to be used when also just viewing replied to messages.

I noticed that if you do view > message source, it shows the plain text including the > symbols.

I'd still love to know how to get the viewer pane to exhibit this behavior.
