I am relatively new to Thunderbird.
How can I get rid of the double dash (--) that appears when I attach a signature to outgoing emails?

Delete key. It is part of the international standards for delimiting a signature. Check the knowledge base at http://kb.mozillazine.org/Signatures_%28Thunderbird%29 for ways to have pseudo signatures.

That's a fairly old thread you've bumped here. There is an even older thread in viewtopic.php?f=28&t=19458 about this with a lot of philosophical discussions, but also hints how to remove the official DDS signature divider from the executable. The thread covers Windows and Linux hacks, the latter may be most similar for Mac OSX as well (which is based on a Unix version in its backend). Look at the later pages...
